Keto Drinks (nailed it)

The keto community generally agrees that alcohol is acceptable in small amounts. The details to this are boring, but as long as it is hard liquor you’re good to go. My go-to drink is vodka-water so there are zero carbs, but sometimes I want some flavor. Jimmy has been really into making Old Fashions this year, but unfortunately we tried to use fake sugar and it just didn’t cut it.


So one day I decided to use some expiring products to create my own version of a keto acceptable drink.

It was really good. I like gin, but Jimmy doesn’t. So I tried it again with bourbon.

Jimmy got this as a birthday gift the week before from Kevin and Janeen, so we decided to use it. It was awesome!

We had a nearly rotten cucumber, a lot of left over limes from Jimmy’s birthday party and some strawberries on their last leg. Muddle-muddle-muddle, Shake-shake-shake, grapefruit bitter and drink!

I would say that after all was said and done, I was surprised that the vodka was my least favorite.

Overall, it was a wonderfully unexpected experiment.

Jimmy and I have been on Keto for 10 days. He is down 7 pounds and I’m down 1/2 pound. Are. You. Kidding?!

It was time for something sweet, so it was time to start experimenting. I found a few recipes with extremely high ratings. I purchased the very expensive ingredients (at least in comparison to standard baking items). Then I got to work.

Little did I know disappointment was looming around the corner.

I don’t remember the exact recipe, but honestly - I don’t think it matters. I had not been on keto long enough to have forgotten how good sugar tastes. The recipe was coconut flour based, but tasted mostly like paste.

I wanted to make sure I was making a fair effort to like keto baked goods, so I made another recipe. This time peanut butter cookies. They look beautiful, while slightly better than their predecessor, they still taste awful.

I regularly gain and lose the same 10 pounds-ish each year. This past year, to my extreme disappointment, I didn’t really cycle through the losing part. (Booooo) Instead I gained I’m guessing 15 pounds? (extra loud BOOOOO)

This is definitely my fault. I haven’t really been exercising as much both purposefully and generally. Jimmy has a car that I’ve used to get groceries (YES I used to carry all of my groceries home), I live closer to the train and - now that I live with Jimmy - I reallllllly have left the apartment less in general.

When my loose fitting jeans suddenly started fitting, I knew I was in for trouble if I didn’t put a stop to it. Jimmy had some extra padding too. We tried eating at home more and, while we didn’t keep gaining more weight, we weren’t really losing it. So we decided to try a trending diet of our times…

KETO

Now most people who know me know that I went for years as a loose vegan to vegetarian to pescatarian. So, of course, keto seems a little extreme. However, lately I’ve been craving the meats. I never used to, so I figured that if the cravings didn’t go away I should just start eating meat. Also, anyone who knows me is aware that details are not my jam. There was no way I was going to count and then track all of the various things that strict keto people do - I can’t even tell you to this day what those things exactly are. Basically, I was going to stay under a certain amount of net carbs and try to make sure I was eating enough fat.

Cooking at home (a luxury craft these busy days) has been something I’ve been working on. I am not the worst cook, but I’m definitely not very good at it. Practice is needed. While I’ll probably never be a natural, I hope I can learn.

I settled on trying Slow Cooker Carnitas from the Simply Keto cookbook by Suzanne Ryan.

First step, buying a slow cooker. After very little research, I settle on a 6 qt Crock Pot from Amazon. Jimmy made fun of me for getting a “huge” one - but the smaller ones seemed so small. Plus, what about when we have friends over?

I had to buy my first pork too. I don’t think I’ve EVER purchased pork on my own in any form other than bacon. Heads up - it isn’t difficult, they let anyone buy it. :) After a few minutes it was ready to be slow cooked.

Then I had to go to work and Jimmy had to finish it off.

I came home after work looking forward to the pork. Jimmy had informed me that they were delicious. I found this in the fridge - ha!

The thing about portraits are that - unless you are an extreme natural - posing for a camera feels weird. It is awkward, feels silly and can feel really dumb at the time. But the longer you hear the click-click-clicks of the camera, the easier it is to get comfortable.

Jimmy, my (usually) wonderful boyfriend, and I decided that we should go on vacation together. I don’t know about you, but I day dream about vacations/places I want to go about 55% of my waking hours. I’m a day dreamer. However, when it comes down to it, I really hate the nitty-gritty details. Like, how am I supposed to know which resort is best? Do we want to go to a resort? Wasn’t there a number of resorts making people sick because they were watering down their liquor? How do I know it won’t be filled with bugs? (ew, sort of my worst nightmare that is also seemingly without guarantee anytime you stay near the ocean but I don’t care when I see one I lose all sense of reality for a bit)

Annnnnnyway, we decided that our factors in traveling would be….

#1 - Can we get there in a single flight? I prefer direct flights for all of the obvious reasons, and Jimmy agreed.
#2 - Is it adult oriented? (I think it’s clear I love kids, but it seems weird to be on my 3rd cocktail at noon with little eyes watching.)
#3 - Is it affordable? Or at least affordable-adjacent?

So we chose a night, got down to it and made all of the decisions. It took 3 hours. My lovely roommate, Lindsey, was full of helpful ideas as well. I think she thought our process was a little weird… but, I mean, we decided all of it all at once, so it wasn’t like she was wrong.

Where did we land? Sunset at the Palms in Jamaica.

And It. Was. AWESOME.

You stay in individual like tree house cabins. Very cool. And, to my happiness, the inside was spotless and totally bug free. :) Ha!

We chose Sunset at the Palms because it was adult oriented and the reviews were great. It is maybe the only resort in Negril where you have to cross the street to get to the ocean, but it didn’t really matter. It felt like we were staying in the middle of the rainforest with a quick and easy walk to the ocean. Best of both worlds!

A good portion of these photos are just from my iPhone 7 camera. It was more of a relaxing vacation for us, and less of an adventure. So I hope that you don’t mind a mix. :)

So we had a little snafu with our flight and were delayed for several hours because of a cabin pressure issue. Then we all shuffled back onto the plane, but then had to wait another hour or so for the right beer cart. ***severe eye roll*** Anyway, by the time we finally landed I was ready for some rum punch! Sunset at the Palms has a complimentary service to help you breeze through security and find your prearranged transport. While you wait for the transport, there is a lounge with lots of rum punch available. They even gave us one for the road - ha!

We were exhausted and starving! Luckily, we made it back in time for the buffet. The first night was spent relaxing in the hot tub, drinking lots of rum punch. We couldn’t believe no one was hanging out in the hot tub, but we didn’t mind! We just floated on our floats and enjoyed the warmth.

Jimmy isn’t much of a morning person. He isn’t crabby at all, just he likes to sleep until he is rested. So after the long day of traveling and then not going to sleep until 2, I thought he would be out until at least 9 and worried he might sleep until 11. He even joked, “My mom has tried to get me up early to go to the beach on vacation and it never works.” We agreed that we should let ourselves sleep in a little so we can enjoy the time tomorrow instead of being sleepy.

That sounds easy enough, but apparently we got our signals crossed. Ha!

Jimmy, shaking me, “Get up! Get up! Get up!”

Me, groggy as can be, “What time is it?

Jimmy, “7:30!”

Me, “… … …what?”

I was so confused. Anyway, I finally agreed that he could re-wake me up at 8. Which he did. On the dot. Ha! Can’t really blame him. He was really excited about seeing the beach. I was too, but it’s hard for me to get excited about anything when I’m sleepy.

Needless to say, we were happy.

Next we needed to eat, change and get back to this beautiful scene!

After getting chairs and a drink, Jimmy and I were quick to get into the water. One surprising thing is that our beach had tons of room! Even though our resort was at capacity, it did not feel busy at all. There were no lines for food, no wait for tables/chairs - even the water was basically empty! It was so wonderful.

We were both a little nervous that people would try to talk to us while on vacation. Little did I know I was dating my own Chatty Cathy - ha! He made friends everywhere, per usual. :) I wouldn’t have him any other way.

That night we went to a Chef’s dinner. The food was significantly better than the buffet food, but it took a very long time. Dinner took almost 2 hours from first course to dessert. We still enjoyed ourselves quite a bit, of course. :)

The mornings were nice and slow. :) I found a way to catch up on my sleep! Ha!

Parasailing! Jimmy got the opportunity to haggle and I got the opportunity to parasail. We both really enjoyed it. It was so calm while in the air, but the coolest parts were #1 - seeing the green of Jamaica. We were on the coast and couldn’t see the topography at all from the beach, but once we were up in the air we could see how hilly/mountainous it is. #2 coolest thing was getting to ride in a fast boat.

I saw a woman next to me get a fresh coconut machete-ed right in front of her. I’m not a huge fan of coconut, but it looked like so much fun! So the next day Jimmy bought me my own coconut. :) The flavor was actually really good. The only weird part that you don’t think about is that it was room temperature.

The last night we had another special dinner. It was romantic and fun. :) We watched the live music next to the late night bar and enjoyed the atmosphere of the resort. It was wonderful.

These two were planning a wedding in India, but wanted to get some engagement photos in Chicago before the big day. It is such a special time, and I’m so happy for them! And they chose to do 2 looks - dressed to the 9’s and winter casual. It was not the coldest winter day, but it certainly was not warm. These two were champs!

I LOVE it when people dress up, however there is always a little more relaxation that comes through the photos when wearing casual clothing. I recommend wearing whatever makes you feel like yourself, weather that is a ballgown, jeans or your pjs! :)

Who doesn’t love the holidays?! Holiday photos are a perfect excuse to document your family each year. It can seem like a huge effort, but the photos usually take less than an hour and I’m typically able to turn these around quickly to ensure your card hits the mail in time.

Unfortunately, my family is a solid 6 1/2 hour car drive away (I don’t have a car) or a short flight. So for holidays, I can’t always go home. Fortunately, I have a wonderful boyfriend that I love spending time with and his family is pretty cool. Double bonus, they are closer AND he has a car.

Jimmy’s mom wanted a family photo for their Christmas card. She previously tried to get one at a graduation party, but there was a keg and a shoeless family member and it was a whole thing. So Thanksgiving was the new aim.

I have two nephews, Carl and Henry, and a niece on the way. The summer after I first moved to Chicago, my mom and sister (Brooke) braved the 6 1/2 hour drive to visit me with the kiddos. These are the highlights…

  1. Purple vomit on the new, white couch. Also, never again to a white couch. Consider that advice for life.
    2. Non-stop screaming from an 18 month old. Non-stop. (Except at the water park. He liked the water park. And being held by Nana, but that lessened the whimpering vs stopping it altogether. My poor mom.)
    3. Two and a half mile walk to Piece Pizza to find out the kids don’t like pizza. Not even Piece Pizza, which is absurd because it is delicious.
    4. Twelve hour car ride home. Twelve. 12!!!!!

So needless to say, my family wasn’t in a hurry to come back with the kids. Ha! So after years, my sister decided she can bring back the kids, but one at a time. She brought the oldest, Carl, first. He is so sweet. When she told him she was going to bring him on his special trip, he said he didn’t think he could go because he has never been without his brother before. Such a sweetie. Of course, Brooke didn’t force him to come. He eventually got really excited. :) And little bro didn’t care at all (he isn’t really the type).

I have a tendency to over plan when I’m excited about something. I’m always working on it, but I can’t just have people visiting me with nothing to do either. Soooooo my friend, Griselda, hooked us up with 4 comp tickets to the Shedd Aquarium (HUGE score) and we picked up tickets to see The Grinch at the Chicago Theater. Other “exciting” things would be riding the brown line to downtown - always fun to see the city this way - and maybe The Bean (Cloud Gate).

Apparently, some jellyfish respond to different lights in water by changing their color. I’m assuming the aquarium purposefully changes the lights so the jellyfish change, but still - it was so cool to watch!

Carl loves animals. He is one of those people who animals like too. My cat likes him, dogs like him - they all like him. I think they can sense his sweet nature. I was worried that Carl wasn’t having fun because this was his facial expression most of the time, but my sister/mom assured me that he was having the time of his life.

Carl didn't really understand the purpose of what we were looking at, which I think is adorable because I’m pretty sure I would’ve had the same reaction as a kid. Though I think it is safe to say he still thought it was cool. Which, of course, it is. :)

Brooke isn’t due until mid-January. This baby girl is already so loved!

We went to see The Grinch. I have been to the Chicago Theater many times, but this might have been the worst experience. The show was really fun, but the theater was significantly understaffed. It was a disaster!

My wonderful mom wanted to go to the top of Willis Tower. :) We went after The Grinch - maybe around 7? - and it was empty. We were thankful. I hadn’t been to the top yet, so this was a new tourist thing for me too! After going to the Top of the Rock in NYC, I was a little bummed. There isn’t an open air balcony, so no matter what the view is distorted a little. With that said, it was cool to walk out onto the window from so high up - even if it wasn’t city side. :)

We revisited Piece Pizza and Stan’s Donuts and did a few other fun things. It was great to have my family travel so far for a trip with me! I miss them already.

This was my first time photographing this babe. First thing I thought was that she was SO CUTE. First thing mom and dad said was that the week before she went through her first wave of stranger danger and had stopped smiling in front of strangers - ha! :)

The Bravest Family

This family cracks me up. The parents are some of the most relaxed and seemingly happy people you could meet with great style to boot!!! This is extra great when one of the kiddos (big brother) could care less about photos/smiling/posing/sitting still. I think it is safe to say that these parents know their kids very well and it is obvious that they love, love, LOVE them. :)

We have had some bad luck with weather for the past few shoots. Last year it was rainy. This year we had to reschedule and, unfortunately, the date landed on the first day in the teens/early 20s. It felt FRIGID! They decided that they wanted to get-it-done and went for it despite the weather. This makes them one of the bravest families! The session lasted 20 minutes - which I consider a win. :)
